an excess (of something): a surplus, too much (of something)
Note that excess can be used as a noun as well as an adjective:
the excess of supply (over demand) much more supply than demand
to drive with excess alcohol (BR) to drive when you have drunk too much
We've trimmed the excess fat off the steak. We've cut the surplus fat from the piece of meat
